Instant Pot Steamed Banana Bread

I had to try this recipe for Steamed Banana Bread because cookerized bread? Yes, please!  I had just recently made some in the bread machine (yum!), so we could compare them. Of course the bread machine took two hours and the Instant Pot took 30 minutes. The results? This cooker really is magic. Great banana bread with bonus banana pudding in the middle. :) That's considered a bonus here, although some would simply say it wasn't cooked through.  Next time I'll just cook it for 35 minutes, instead of 30. But honestly, the pudding middle was super good and we all liked it!

I don't have many accessories (yet) for pot-in-pot cooking, but I do have this glass bowl that worked. (Anything that's oven safe will work in the Instant Pot.)
I used a foil sling to easily get it out afterward, and folded down the sides for cooking.  Of course there is water in the bottom to create the steam and pressure.
It looked like a mountain of yummy bread, which is exactly what it turned out to be. 
 It was great! And oh, that yummy middle. We might actually under cook it once in a while now.

  1. I see the link to the original recipe - it shows to put buttered foil over the top - did you do that in the Instant Pot?
